This coffee has a really clean, classic example of the Chiapas region. The cup starts with strong notes of toasted pecans, pleasant praline, and rooibos tea that is balanced with a candy-like combination of sweet and baking spices that remind me of spice drops. If that name doesn't ring a bell, I suggest a quick Google search and I guarantee you've likely enjoyed these little gummy candies around the holidays from a random bowl of candy at your grandma’s, or maybe that's just me. It also has a nice medium body or mouthfeel with a drying finish that lingers on the palate for a long time.
